
This October, my garden was filled with suprises as it felt like I was constantly discovering new things growing, some of them being arugula, apples, and the pomegranates finally started to ripen. And with just these three ingredients, I knew they would make the perfect fall salad that I didn't know I was craving! With the seasons changing and leaves falling, I decided to create a farm to table experience for some of my friends and that this salad would be the perfect starter to the evening. I am not typically an arugula fan, but I was pleasantly surprised at how much I loved it along with the combination of adding the apple and pomegranate along with the balsamic. Because I wanted to use only from what was from my garden for the farm to table experience, this recipe popped up on Pinterest and although it originally called for spinach and feta which I ommitted, I felt this salad was absolutely what I was looking for and wonderfully surprising! Ingredients
15 oz arugula
1 1/2 fuji apple
1/2 red onion
2 cups pomegranate seeds
1/2 cup feta cheese (optional)
1/2 cup chopped pecans
Ingredients for the dressing:
3/4 cup olive oil
1/2 cup balsamic vinegar
2 tsp honey
Salt & pepper
Instructions
Combine olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl. Whisk it until well combined.
Slice the red onion and apple.
Arrange all of the ingredients into a large bowl, then drizzle with the balsamic vinaigrette and mix . Eat fresh for best results!
