Baked Cheesy Zucchini

Zucchini season may be over, but my zucchini plants are saying otherwise when they are coming out larger than my 2 month old baby! As you can probably imagine, I've been making all things zucchini including my favorite zucchini bread and this is another favorite way to make zucchini where you can still get the crunch out of it without it getting too soft! This dish can be served to vegetarians as well and is a great healthy side dish that goes with just about any meal! Some of the main ingredients were picked fresh from our garden, incuding the cherry tomatoes, zucchini, and the shallots as well since I had them. Next year I'll hopefully be able to harvest some of the bell peppers for this dish as well! The mozzarella cheese on top is like the cherry on top and just makes everything melt in your mouth! Plus, this dish is low carb and a throw-it-all-in-one-pan kind of meal that makes for an easy clean up! The kids may love it as well!

Ingredients
  • 2 large zucchinis, diced

  • 1 onion, chopped

  • 1 cup cherry tomatoes, halved

  • 1 green bell pepper, diced

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt

  • 1 teaspoon fresh cracked black pepper

  • 1 cup grated mozzarella cheese

  • 1 tablespoon parsley, for garnish


Instructions
  1. Preheat your oven to 375ºF (190ºC).

  2. In a baking dish, combine diced zucchini, bell pepper, chopped onions, grape tomatoes, Italian seasoning, garlic powder, and half the shredded mozzarella. Season with salt, fresh ground black pepper, and drizzle with olive oil. Mix ingredients until seasoning and cheese are distributed evenly.

  3. Bake in the oven uncovered for about 20 minutes, or slightly longer if needed. Pierce a piece of zucchini with a fork to be sure it’s mostly tender.


  4. When the zucchini is nearly cooked through, remove the baking from the oven and sprinkle over the remaining 1/2 cup of grated mozzarella. Put the dish back in the oven and bake 10 minutes longer, or until the cheese is melted and nicely browned and the zucchini is fully cooked. Sprinkle with fresh parsley and serve immediately. Enjoy!
