Peaceful Peach Crisp

There’s just something about peaches that feels like summer joy in a bowl. They’re soft, juicy, naturally sweet—and when you bake them into a bubbly crisp with a golden oat topping? Magic.


I first made a version of this when my mom gave me a big batch of handpicked peaches from her garden (a true gift!). I was craving something simple and sweet, but also easy enough to pull together during a full week of mom-life. I needed a treat that felt special but didn’t take too much effort — and this crisp was exactly that.


Since then, it’s become a favorite recipe to whip up for family dinners, birthday celebrations, or even a little “just because” dessert to share on the patio. It’s the kind of dish that makes your kitchen smell like heaven and your people feel loved.

We call it Peace Crisp because it brings that cozy, happy calm — the kind that comes from being present, using what you have, and letting the little things be enough.

Ingredients

For the Peach Filling:
  • 3 ½ lbs fresh peaches (about 6–8), peeled, pitted, and sliced into ¾" wedges

  • ¼ cup granulated sugar

  • 2 Tbsp all-purpose flour

  • 2 tsp fresh lemon juice

  • ½ tsp vanilla extract

  • Dash of cinnamon

  • Pinch of salt


For the Crumble Topping:
  • ½ cup all-purpose flour

  • ½ cup old-fashioned rolled oats

  • ½ cup light brown sugar

  • ½ tsp baking powder

  • ¼ tsp ground cinnamon

  • Dash of ground nutmeg

  • Pinch of salt

  • ⅓ cup unsalted butter, cold and cubed

How to Make It

Step 1: Sweeten the Peaches

Place your sliced peaches in a bowl, sprinkle with sugar, and toss gently. Let them sit for 20 minutes while you prep the topping — this gives them time to get nice and juicy!


Step 2: Make the Crumble

Mix the flour, oats, brown sugar, baking powder, cinnamon, nutmeg, and salt in a separate bowl. Cut in the cold butter with a pastry blender or fork until crumbly. Chill the topping in the fridge while you work on the filling.


Step 3: Mix the Filling

Drain the peaches and reserve ¼ cup of the juice (sip the rest — you deserve it). In a small bowl, stir that juice with flour, lemon juice, vanilla, cinnamon, and salt. Pour it over the peaches and toss to coat.


Step 4: Assemble & Bake

Preheat your oven to 375°F. Spread the peach filling into a greased 8×8” baking dish. Sprinkle the crumble evenly over the top. Bake for 30–35 minutes or until golden, bubbly, and your kitchen smells like pure joy.


Step 5: Cool & Serve

Let it sit for 10 minutes before serving so the filling can thicken up. Then scoop it into bowls, add a little ice cream if you’d like, and enjoy every bite of this sunshiny comfort.
